Ingredients

1 baby cos lettuce (omit the very small white leaves in the centre)

¼ medium avocado

½ cup almond milk

½ a long cucumber

1 cup frozen mixed berries

1 ½ tbsp vegan protein powder (Isowhey Brown Rice & Pea)

Currant, Cranberry & Pistachio Paleo Porridge

I used to eat oats every morning during winter. It used to be my staple breakfast and I would look forward to it every day. Until my gut changed, and now oats are an issue for me (it’s a fodmap). So since the mornings are getting a little frostier, I wanted to create a porridge that would fill me up, comfort my tummy, and not leave me feeling like a blown up balloon, tired and uncomfortable. Healthy desserts are my absolute weakness, but when I am constantly buying them out I cannot help but wonder how much sugar (refined or not) is actually being pumped into me. All in the name of “healthy” “raw” or “vegan” treats. It is usually around this time that I start to experiment at home because at least I will know what exactly is in them and I can easily adjust the sweetness to my own personal flavour.
