As the weather here in Australia cools down, our bellies crave warm and comforting foods. There’s no need to compromise your health during the cooler months, here’s a deliciously healthy and comforting wholefood breakfast idea that’s suitable for sensitive tummies. It’s gluten free, dairy free, low FODMAP, paleo and suitable for vegans and vegetarians. Plus it tastes amazing. Enjoy!
1/3 cup quinoa flakes
2/3 cup almond milk
1 tbs flaxseeds
2 tbs shredded coconut
1 tsp natvia/natural sweetener of choice
1 tsp cinnamon
In a pot combine quinoa flakes, almond milk, flaxseeds, 1 tablespoon of shredded coconut, natvia and cinnamon
Stir constantly over medium heat, until porridge-like consistency
In a separate pan, toast the remaining tablespoon of shredded coconut until golden
Top porridge with toasted coconut and more cinnamon
SUGGESTIONS: Delicious with a tsp of nut butter (I recommend almond butter), mixed seeds or fresh/frozen berries
